Microwave mug brownie – gluten-free

My daughter has just made me some chocolate brownie, in the microwave and in a mug. Delicious and very rich – a struggle to eat it all in one go.

Ingredients
4 tbsp flour (gluten-free Dove’s Farm flour works well in this recipe)
2 tbsp cocoa powder
2 1/2 tbsp sugar
2 tbsp water
2 tbsp melted butter
pinch salt
some vanilla essence

Method
Mix ingredients thoroughly in a mug.
Cook in microwave for 1 1/2 to 2 minutes.

I think it would be even better with a blob of cream or Greek yoghourt on top. It has a good gooey brownie texture. Yum.

Sorry – forgot to take a photo before I ate it.

Edited to try out the ‘more’ tag, to move the recipe off my homepage, following the prompt here

  1. Very tasty looking ice-cream and sorbet recipes here – they’d go very well, I think. http://ice-cream-magazine.com/2013/06/21/no-cook-vanilla-ice-cream-2/comment-page-1/#comment-541
