We grew a row of purple potatoes this year. They haven’t produced all that many potatoes, but they are amazingly beautiful.
When you cook them, the water goes bright blue! Though if you add some vinegar, it turns pink – very entertaining. I made some minted potato salad – very tasty, but it does look a bit strange.
We had mashed potatoes a few days ago – they were blue-grey. Yum.

Its really strange, I like blue as a colour but not sure as a FOOD colour, bet they tasted wonderful though.

It’s remarkably hard to appreciate the taste of blue food! They were fun though.
